A Conversation with Cooper King Distillery and The Green Co.

Let's start from the beginning! Cooper King started with a trip to Tasmania and a big life change. Can you tell us how that experience led to launching your own distillery back in the UK?

When we went out to Tasmania we didn’t even have whisky on our radar, we were just there to get away from our old jobs and have an adventure. But the whisky scene we found there was so brilliant, it planted an inkling of an idea that we couldn’t shake. It was the first time we’d come across whisky making on such a small scale, but with such high quality results. It didn’t take long for us to realise that this was what we actually wanted to do, so then we spent the next two years in Tasmania learning everything there was to know about making whisky and running a distilling company. 


Since those early days, how has Cooper King evolved, and what can people experience today, from your spirits to visiting the distillery?

We came home to Yorkshire in 2016 and started our own distillery, modelled on the Tassie idea; small set-up, nothing flashy, focus on the liquid. We physically built the distillery ourselves, started distilling gin in 2018 and whisky (in the copper pot still we shipped over from Tasmania!) in 2019. These days we make gins, liqueurs, vodkas and the single malt whisky. We’re a small team and you can tour the distillery and enjoy a tasting on Wednesdays and Saturdays. We still count as a very new distillery in whisky terms, but we’re carving out our spot in English whisky and building a reputation for delicious, sustainable spirits.

You’ve produced England’s first net zero energy whisky, which is a huge achievement. What did that journey look like, and why was it something you were committed to from the start?

It was always going to be the cornerstone of any business we built. We concentrate on energy and water efficiency in all our processes, and then make sure that all the energy that we do have to use comes from renewables (either the grid or our own solar panels). We used an environmental consultant to calculate all our Scope 1 & 2 emissions right from when we began production in 2018, and then these residual emissions were offset in three ways; ‘direct air capture’ with ClimeWorks, planting native broadleaf woodland here with the Yorkshire Dales Millennium Trust, and planting overseas in the Guanaré Forest Plantation in Uruguay. 

From refill schemes to zero waste to landfill, you’ve built sustainability into the day-to-day running of the distillery. What are some of the changes you’re most proud of?

One really visible one is the upgrade to our whisky still that we did in 2021. We had the whole pot section coated in a ceramic insulating paint that NASA developed for the nose cones of their spacecraft! It radically reduces heat loss from the copper and made our whole distillation much more efficient. The refill scheme is a great one too because it has so many benefits; the environmental impact of reusing the glass bottle is fantastic but it’s great for building a community too, it really encourages people to drop into the distillery or look out for us at local markets.

Your work with the Yorkshire Dales Millennium Trust is really inspiring. Can you tell us more about the impact this has had, from woodland creation to supporting rural apprenticeships?

We were the first distillery in Europe to join the global initiative 1% For The Planet, where we commit to donating at least 1% of sales (not profit) to environmental causes, and we chose Yorkshire Dales Millennium Trust as our charity partner. So for every bottle of gin sold, 1 sq m of native woodland is planted. Additionally, for each bottle of liqueur or vodka sold, 1 sq m of wildflower meadow is restored. And finally, for each bottle of whisky sold, we donate £1 to the YDMT’s Rural Apprenticeships Scheme - crucially preserving traditional skills, providing jobs and training for young people and protecting local habitats.

With summer on the way do you have a go-to serve you’d recommend?

We’re big believers in drinking our spirits however you’d like, we don’t believe in any of the ‘rules’ of whisky or gin drinking. That said, when the sun finally reappears, the first thing we go for is a whisky highball - a measure of whisky, over ice in a tall glass, topped with soda water and a slice of something to garnish. Refreshing, delicious and endlessly customisable. The perfect summer drink! We serve them here at the distillery bar too, so pop in and see us on a Saturday if you’re ever in the area!
